All of our pork comes from Saddleback pigs, a traditional native breed from the Southwest. Our pork is not mass-produced, all our Saddleback pigs are 100% free-range - they are slow-grown and live outdoors, happy lives. We mature the meat by hanging it on the bone for three weeks and obtain that distinctive and wonderful texture and flavour. No wonder why our pork makes such sensational, crispy, crackling!
