All of our pork comes from Saddleback pigs, a traditional native breed from the Southwest. Our pigs are grown in small family groups and live properly free-range outdoor lives. We are often asked why our roasting joints have the most amazing crackling. It is because our pigs have to grow a thick layer of skin as they live outdoors - like pigs should - protecting themselves from the cold and also sunshine. We mature our pork by hanging it on the bone for three weeks, developing the distinctive flavour and texture we have become renowned for.
