Our Lamb shoulder has more fat throughout the joint than our Leg of Lamb. This delivers a sweetness and richness of both flavour and character.
It lends itself perfectly to a long slow roast, so that the bones will fall away from the meat before carving or shredding.
If you prefer less fat then choose our boneless shoulder joint, which is meticulously trimmed of excess fat. It can be cooked more quickly and is so simple to carve.
