We like to leave the skin on our properly free range chicken breasts, as, in our opinion, this is one of the best bits of a bird. We love it when it crisps up in the pan, with its brittle crisp texture complimenting the soft and moist texture of the breast itself perfectly.

To make the most of the flavour in your chicken breast we recommend lightly seasoning the skin and drizzling with a little oil. Place it skin side down in a medium hot pan over your hob for 3-4 minutes to get that skin nice a crispy and golden brown. Flip over and cook flesh side down for another 2-3 minutes. Cover loosely and rest for 5 minutes, during this time it will continue to cook. Serve whole or slice into 1 inch thick slices for a super simple scrumptious meal.
