Our bacon is traditionally cured and air-dried, with a wonderful texture that crisps in the pan and just the right amount of fat cover for flavour.
We prefer a light, fragrant smoke over oak, not too strong, so that it enhances, rather than disguises, the essential flavour of the bacon.
We use a traditional method of smoking, by smoking over freshly cut oak chips.
