Our Silverside has slightly more bite than our Topside, but is as equally good as a roasting joint.
Silverside can be cooked fast under a high heat and eaten rare to really appreciate the wonderful depth of flavour.
If you are cooking the joint this way the secret is to let the meat rest and slice it thinly for a delicious eating sensation.
It can also be cooked longer and slower if you like your meat well done rather than rare.
Great in a pot roast with plenty of liquid.
