Our Salt Beef comes from the Brisket. Taken from the underside of the shoulder, the brisket has a long line of fat that is trimmed and then neatly rolled to create a smart roasting joint.
We meticulously trim our Salt Beef so there is just enough fat to add a lovely depth of flavour to your meal.
Lightly salted, we cure our Brisket for a week in a traditional brine.
Perfect for pot roasting, the flakey texture from the flank muscle delivers the most wonderful slow roast to be enjoyed hot or cold.
This wonderful joint is very much back in fashion with deli's serving wonderful American style sandwiches with stacks of pickles and mustard. A real treat.
