The feather steak sits under the shoulder blade, and has a line of cartilage running through the middle.
Although it looks the same as you see in the shin, it behaves very differently. It does less work, so it only needs very little cooking to make it melt and give the most delicious flavour. Even pan-fried to medium it will still be moist and very tasty!
