The Rib Eye is the group of muscles which forms the centre of the fore-rib. The main part of the Rib Eye is the eye muscle that runs up through the Sirloin (the Entrecôte muscle) and alongside this are two muscles including the chuck.
As well as the marbling fat within the steak there is fat running between these different muscles which gives the exceptional character and flavour to our Rib Eye Steak.
