5 flavoured butter recipes

We're always getting asked for nifty tips and tricks to turn a feast into something extra special. Like most of our favourite recipes, making your own flavour packed butter couldn't be more simple...

 

Method

Take about 100g of butter out of the fridge for an hour to soften. Flavour is key here, so don’t scrimp on the butter you use. Our favourite butter is Quicke’s Grass Fed Whey butter, however, you can use any good quality butter. Beat the butter with a wooden spoon until it is soft and then beat in any of the flavourings you fancy. (See below)

Tip the flavoured butter onto a square of baking parchment, cling film, or a beeswax wrap and roll it around the butter to form a sausage shape, then twist the ends to seal. The flavoured butter can be stored for up to 3 days in the fridge or a month in the freezer.

Horseradish & Peppercorn

A small piece of grated fresh horseradish to taste, or 2 tsps of horseradish cream, crushed black peppercorns and a pinch of sea salt.

Goes great with: Red Ruby steak

Purple & Green Sage

Finely diced purple and green sage, half a clove of crushed garlic and a pinch of sea salt. 

Goes great with: Saddleback pork escalopes

Truffle & Porcini Mushroom

A small piece of truffle finely grated, porcini powder (you can make this by blitzing dried porcini mushrooms in a food processor) and a pinch of sea salt. 

Goes great with: Red Ruby beef, Saddleback pork and Properly Free Range chicken

Garden Herb & Garlic

x1 crushed garlic clove, a small pinch of sea salt and finely chopped fresh herbs from the garden (we like thyme, rosemary & oregano)

Goes great with: Properly Free Range chicken breast

Black Garlic

x2 cloves of crushed black garlic, a small pinch of porcini powder, finely chopped chives and a pinch of sea salt. 

Goes great with: Red Ruby steak
