A lovely, quick and easy wholesome salad that is divine for lunchtimes.


  • 200g free-range chicken breast
  • 350g cold new potatoes halved
  • 75g cooked green beans
  • Cherry tomatoes halved
  • 12 Kalamata olives halved
  • A tablespoon of mayonnaise
  • A small bunch of chives
  • Cherry tomatoes halved
  • Chopped iceberg lettuce


  1. Pan fry the chicken breast for about 2-3 minutes on each side. Leave to rest for 5 minutes while you make the rest of the salad.
  2. Mix the potatoes, green beans, olives, chopped iceberg lettuce, tomatoes together with the mayonnaise and chives.
  3. Slice the chicken breast and mix thoroughly with the rest of the salad.
  4. Season to taste and serve.
