  • Start by heating some olive oil in a pan on a high heat. 

    Pat the pollock dry with a cloth or kitchen towel and season with salt. 

    Lay the fish away from you in the pan and leave for 2-3 mins. Refrain from moving the fish before turning. 

    Cook the same on the other side. 

    Remove from the pan and season with some sea salt and a squeeze of lemon.
