Winning at the Great Taste Awards 2018

We are thrilled to share the results of this year's Great Taste Awards. It is a wonderful thing to have our cuts of meat recognised for their flavour by an impressive pedigree of judges. This year we won four awards including 3 gold stars for our Saddleback Pork Steaks as well as a Golden Fork nomination.

Saddleback Pork Neck Steaks

We're delighted that our Saddleback Pork Steaks picked up an impressive 3 gold stars this year. Described by the Great Taste judges as a “piggy steak with a gentle texture and gamey notes on the nose and at the end, a really delicious thing”. The panel made note of the Saddleback Neck Steak’s “fantastic depth of flavour” and “great steak-like texture with porky complexity”, agreeing that “you can tell the time that has gone into the hanging” as they awarded the cut Great Taste’s highest star rating.

Not only that but they've also been nominated for a Golden Fork award which will be revealed in September. We're over the moon that it has received such high acclaim. Our Saddleback Pigs are grown by the Snell family who are just down the road from us. Growing the pigs in harmony with the land alongside fodder beat as well as allowing them to forage for windfalls such as fallen apples and acorns. 

What the judges had to say

"A juicy looking steak which has caramelised well. We found the meat moist and it has a great texture with the right amount of chew. We really like the depth of flavour of this steak and feel it has a long length of flavour. The fat is full of flavour and a great melt in the mouth texture."

"A juicy mouthful - soft and tender, great pork flavour and a superb finish. The deep notes of savoury pork are intense and yet also sweet. We loved the lingering finish of complex, savoury porkiness - delicious."

 

Saddleback Pork Neck Steaks

Properly Free Range Duck 

Our Properly Free Range Duck also picked up an award this year. Just like our chickens, our ducks live a properly free-range life, roaming amongst lush Devon pasture, eating a natural diet of forage and whole grains. Our free-range duck live significantly longer than most other free-range and organic birds and it's great to see them win for taste, proving growing slowly at nature's pace is key in developing that depth of flavour.  

What the judges had to say

"Very intense aroma with a tender texture and a buttery softness on the palate. Fantastic, well-rounded flavour with tasty skin and a good level of fat which is well distributed. The meat itself was lacking in richness and leaves the judges wanting more.

"A good-looking duck, a decent depth of meat on the breast - and cooked very well with lots of succulence apparent.  A very moist bite, tender and rich in flavour. The fat also offers great flavour, savoury and with a hint of sweetness.  Melting and very delicious. The flavour lingers very well and the tenderness is commendable. The leg meat is also succulent and full flavoured."

Properly Free Range Chicken

2018 has been a wonderful year for our Properly Free Range Chicken. As well as coming out with an impressive 5 star status in The Telegraph's taste test we have also now won an award from the Great Taste Awards. Chickens are the reason we started Pipers Farm all those years ago and it's fantastic to receive praise for these birds. 

What the judges had to say

"A well-cooked bird with crispy golden skin and a moist breast. A fresh, sweet and grassy aroma which leads through to the flavour."

"A moist and tender bite to the flesh with crisp and buttery tastes from the skin. Slight gamey notes to the dark meat with rich savoury juices to finish. A flavour with depth and commendable length."

The judges felt that this is how real farmyard chicken used to taste and should now. A really tasty little bird.

"Fabulous aroma. Juicy breast, sticky succulent dark meat with clear flavour. Very satisfying texture judges would love even more flavour."

 

Properly Free Range Chicken

Red Ruby Oxtail

We're over the moon that our Red Ruby Oxtail picked up an award this year. Our grandparents relished oxtail, but it fell from favour for a while and is only now making a well-deserved comeback. Packing a huge nutritious thwack, oxtail is packed with gelatinous goodies like marrow and collagen. Surprisingly meaty it makes stews of unparalleled richness, with the collagen melting away to make thick, delicious gravy. Cooked super-slow, the meat will fall off the bone so there's no fussing needed. For such a versatile and intensely delicious cut, oxtail is excellent value. It's great to see this cut winning an award showcasing this fantastic cut. 

What the judges had to say

"Impressive looking oxtail, meaty and glutinous, extremely tender and easy to cut, slips cleanly off the bone. We enjoyed the soft melting texture and deep oxtail flavour though did appreciate that casseroling this meat would be a better way of cooking it to unlock its full potential (usual method is in stout!)."

"A good sticky feel on this oxtail - rich and flavoursome meat. Very succulent and we talked about all the beautiful dishes we could make with this humble cut."
