Why we love this
Berkswell is a British, hard, raw, ewe's milk cheese. It is often compared to Manchego for its similar flavour and texture.
The first Berkswell cheese was made by Stephen Fletcher's mother Sheila in the early 1990s. Its unique shape comes from originally being moulded in a kitchen colander.
Matured for around 4 months, this cheese is one of the most delicious, Ewe's milk cheeses available, even winning Supreme Champion at the Artisan Cheese Awards.
Easily identifiable from its rustic, earthy looking crust, this cheese is full of mellow, fruit flavours with undertones of sweet caramel.
Berkswell can be used in place of parmesan or manchego, it's wonderful grated, shaved or wedged over pasta and salads.
When pairing Berkswell try it with beautifully sweet things; grapes, figs and prunes all work in harmony. Try a drizzle of our Wild Flower Honey drizzled over a wedge, or alongside a dollop of our Sweet Onion Marmalade.
