We think Picanha Rump is a forgotten joint that should definitely be remembered. Known as the 'rump cap' or 'fat-on rump', picanha is a much loved feature of Brazilian barbecues. With beautifully sweet fat that renders into the most delicious caramelised flavour, combined with deeply marbled meat.

Each Picanha weighs approximately 1kg. We recommend 4 portions per kg.
When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes until they are fully thawed. Once fully thawed remove the packaging and get cooking.
You can also gently thaw any items by leaving them in the fridge or at room temperature.

Notes from the kitchen
Preheat the oven to 180C.
Sear, fat side down in a hot pan to render down and crisp the fat.
Roast in a preheated oven for approximately 15 minutes. Or best of all use a meat thermometer and roast until the thermometer reaches 45C.
Leave to rest uncovered for at least 15 minutes.
