  • The equivalent of a fine sirloin of beef, our 100% Grass Fed Cull Yaw Mutton Loin is a showstopping cut.

Our 100% Grass Fed, slow grown mutton is hung on the bone for two weeks to create the most incredible texture and flavour to the meat.

Our mutton loin has been skillfully butchered to create a beautiful joint that celebrates the eye of the loin (the most fine-grained muscle), wrapped in a good covering of fat to provide a blanket of flavour.

Cook fast and serve pink for the best results.

Cull Yaw is a term commonly used in Cornwall to refer to a cull ewe, which is a sheep that is no longer suitable for breeding.

Our mutton sheep are reared for at least 7 years, resulting in a rich and deep flavour. After their breeding cycle, they forage in ancient woodlands and rich herbal leys to add a wonderful layer of fat that enhances the taste further.

  • Grass Fed Mutton

  • Preheat the oven to 180ºC. Heat an oven proof pan on the hob.

Rub a little salt into the fat of the loin and place into the hot pan.

Sear the loin on all sides for 2-3 minutes. Place the pan into the oven and cook for 15 minutes for rare, and 20 minutes for a little more well done.

Rest uncovered for 15 minutes before serving.
