Our 100% grass fed leg of mutton is hung on the bone for three weeks to create the most incredible texture and flavour to the meat.
The mutton loin has been skillfully butchered to create a beautiful joint of that celebrates the eye of the loin (the most fine-grained muscle), wrapped in a good covering of fat to provide a blanket of flavour.
Cook fast and serve pink for the best results.

When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes until they are fully thawed. Once fully thawed remove the packaging and get cooking.
You can also gently thaw any items by leaving them in the fridge or at room temperature.

Notes from the kitchen
Preheat the oven to 180ºC.Heat an oven proof pan on the hob.
Rub a little salt into the fat of the loin and place into the hot pan.
Sear the loin on all sides for 2-3 minutes. Place the pan into the oven and cook for 15 minutes for rare, and 20 minutes for a little more well done.
Rest uncovered for 15 minutes before serving.
