  • Easy to prepare and wonderful when cooked as slowly as possible. 

    There's little that's more comforting, warming or traditional than a rich, hearty beef stew. Our Grass Fed Diced Beef Shin will yield ultimate tenderness and full-bodied flavour.

    Beef shin is one of the most hardworking parts of the beef carcass, so needs long cooking at a low heat to relax the muscle and melt all the gelatinous bits. It's well worth the wait, though and will result in a dish that melts in the mouth.

  • 100% Grass Fed Beef

  • To defrost the beef shin, place into a bowl of cool water (still in its packaging) and leave for approximately 10 minutes to get to room temperature.

    Preheat a fan assisted oven to 150C.

    To cook the shin of beef place in a bowl place a handful of plain flour, lightly season the flour with salt and pepper and toss the beef shin through the flour.

    Add some Beef Dripping or Ghee to a castiron pot with a fitting lid and place on a medium-high heat. Add the beef shin to the pot and carefully brown. Remove the braising beef from the pot and set aside. 

    To the pot add a few halved shallots and cook until soft. Add a small handful of garden herbs, a couple of cloves of garlic, a glass of red wine and a pouch of Beef Stock. 

    Return the beef to the pot and place the lid on top. 

    Move the pot into the oven and cook for 2-3 hours, until the beef is beautifully tender.

All Pipers Farm meat is blast frozen at the perfect moment, locking in important nutrients and guaranteeing it tastes amazing. We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
