A great alternative to a traditional Beef Topside. Our Parkland Venison Haunch is super lean with an intense depth of flavour.

Serve this joint simply, with seasonal root vegetables and a light gravy.

How to cook a Venison Haunch

Heat your oven to 180ºC.

Heat a cast iron pan on the hob. 

Rub a little oil and seasoning over your Venison Haunch.

Place the haunch in your hot pan, and sear for a few minutes on all sides.

Place into your oven and roast for 15 minutes per 500g.

Remove from your oven and rest for 20 minutes before carving. 

Don't waste those amazing juices and sticky bits of meat in your pan. Heat over your hob, add some finely sliced cloves of garlic and crushed juniper berries, followed by a good slosh of red wine. Reduce to make the perfect jus accompaniment.
