400g Saddleback Pork Chops

2 tbsp Dijon mustard

1 handful pecan nuts

1 handful pistachio nuts

Cooking method

1. Heat your oven to 180ºC.

2. Blitz your nuts in a blender if you have one; alternatively chop them finely with a sharp knife. Mix them in with the mustard and smother all over your pork.

3. Grab a roasting dish and place your pork in the centre. Roast in the oven for 20 minutes. After 20 minutes pull your pork out of the oven and leave on the side to rest while you prepare your board. Place the pork in the centre as the star of the show and surround with your favourite sides. I went for baked new potatoes with rosemary and garlic, spiced cabbage, roasted avocados and griddled toms' - The perfect casual eating experience!
