Why we love this
Comté is a complex and fruity cheese, with 83 flavour profiles, ranging from savoury, nutty tones to sweet, caramelised butter. Each cheese will be slightly different, owing to the altitude the cows graze at, the time of year and the ageing process.
Produced in the Jura mountains in Eastern France, it is made using the raw milk from Montbeliarde and French Simmentale cows which are fed exclusively on grass and hay. A pale, yellow interior reveals a hard texture, but that melts easily, meaning it can be used in a variety of dishes such as fondue, as well as at home on a cheeseboard.
