Our ducks live a properly free-range life, roaming amongst lush pasture, eating a natural diet of forage and whole grains. Our free-range ducks live significantly longer than most other free-range and organic birds.

Each duck breast weighs approximately 200g - 225g
Free Range Duck
Bring the duck breast to room temperature and preheat your oven to 180C.
Carefully pierce the fattiest parts of the skin all over and season the fat with sea salt and pepper.
Take a cold castiron pan and place skin side down. Only turning the duck once the pan is up to full temperature and you hear the fat sizzle.
Turn the breast onto the flesh side and cook for 1 minute until browned.
Once the fat has rendered and the duck breast browned (should take no longer than 5 minutes) pop the pan into your preheated oven and cook for a further 6 minutes.
Remove from the oven and rest for at leats 10 minutes, uncovered.
