Where are thighs cut from?
n our opinion the most flavoursome part of the carcass. We split the joint between the thigh and the drumstick and create two separate cuts, this is because they cook differently. Thighs can come on the bone or boneless, either will deliver sensational flavour. If you are planning a longer cook we would always recommend keeping the thighs on the bone. The thigh is made up of flavoursome meat, fine collagen and delicious fat.
