Why we love this
If you are after a unique cheese that is unlike anything you have tasted before, this cheese ticks all the boxes. Known as Old Groendal but affectionately nicknamed as OG Kristal, it lives up its name, owing to the large crystals which pop in your mouth!
As with all Gouda, the cheese leans toward sweeter notes and in this case also balanced by chocolatey and malty notes. Its long-lasting finish is reminiscent of liqueur-soaked cherries. The texture remains extremely moist and creamy for a cheese of its age, with pronounced, even crystallisation.
This wonderful cheese is made by the Deweer family in West Flanders in Belgium, who keep a close relationship with the dairy farming neighbours in their town, sourcing the best possible milk available to them. Much of the milk comes from the herd that was formerly owned by the Deweer’s, who gave up the farming to focus on cheese. The production uses traditional Gouda methods and aged for a minimum of 18 months and there is a closely guarded method that enhances the production of tyrosine; the crystals that form extensively in the cheese!
