Properly Free Range Duck Crown
Full of succulent fatty meat which falls away from the bone, a crown is a very popular joint as it's quick to cook, easy to carve and the perfect size for a small family. The prime jewel of your kitchen table, our Properly Free Range Duck Crown is fit for kings and queens.
Our ducks live a properly free-range life, roaming amongst lush Devon pasture, eating a natural diet of forage and whole grains. Our free-range duck live significantly longer than most other free-range and organic birds.
We hang our ducks for a week to further develop a depth of flavour and enhance the delicious texture of the meat.
Preheat the oven to 160 degrees.
Score the duck crown, then season and place into a hot cast-iron heavy based saucepan. Brown the skin for around five minutes rolling the crown occasionally. The skin should be golden brown all over.
Place the whole pan into a hot oven at 160 degrees for around 15 minutes. If you have a meat thermometer, you can make sure that the core has reached 45 degrees.
Remove the crown from the oven, cover with tin foil and allow to rest for ten minutes, then slice and serve.

When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes until they are fully thawed. Once fully thawed remove the packaging and get cooking.
You can also gently thaw any items by leaving them in the fridge or at room temperature.
