An ancient grain that is undergoing a modern revival. 

This spelt flour is finely milled in order to give you a silky texture and maximum flavour. It is created from a true Spelt variety called Oberkulmer Rotkorn that is packed full of dietary fibre, protein, and vitamins and minerals. 

For any recipe that uses wheat flour, you can substitute in spelt flour for a more nutty flavour and airy texture. Why not try it in some tasty chocolate cookies or perhaps in your favourite pancake recipe? Either way, it's sure to become a mainstay in your pantry.

Based just two miles north of Hadrian's Wall, it is clear to see how Gilchesters Organics ethos and methodology takes inspiration and influence from the rich history and dramatic landscape which surrounds it. 

Run by husband and wife team, Angrew and Sybille Wilkinson, their family philosophy is to work with nature in growing and milling their heritage grains alondside herds of rare-breed cattle to combine a balance between farming and wildlife conservation. Their rejection of modern farming production methods emphasises their commitment to the fundamental principle of growing crops and livestock within the natural constraints of the land. 

Like Pipers Farm, Gilchesters rotation of crops and animals on each field is designed to ensure that the soils are never depleted of their naturally occuring minerals and nutrients. Their ongoing conservation programme is a testament to their dedication to the environment that surrounds them.
