This English blue cheese is similar to that of Stilton, employing the same techniques to create the blue veins for which is it famous. An extremely versatile cheese with a wide ranging palette of flavours, from sweet green apples to beef umami.
This is a truly exceptional cheese; made with raw milk from Jonny and Dulce's herd of Montbeliarde cows. It is the only traditional raw milk Brie-de-Meaux style cheese produced in the UK. In fact, even the French would be jealous, as this cheese is one of only a handful of its type in the world to be made by the farmer on the farm and can genuinely be called a true farmhouse Brie.
Handcrafted using heritage starters by expert cheesemakers, this exquisite cheese is naturally matured, typically for 14 to 16 months. A rich, intense cheese with a huge depth of flavour.
Westcombe Raw Milk Cheddar
Handmade from unadulterated, raw cows' milk, Westcombe Cheddar has a deep complex flavour with long notes of citrus, hazelnut and caramel. These long notes have given way to its tongue in cheek nickname of the 'five mile cheddar' as you're still tasting it 5 miles down the road!
It’s wonderfully dense and rich, and has a mouthfeel not unlike butter. With an earthy aroma on the nose, at first you’ll detect hints of yoghurt and grassy sweetness on the palate, which then unfurl into toasty notes.
