Our Boneless Red Ruby Rib of Beef has lots of character. It is cut from the end of the marbled muscle from the sirloin, and includes several of the muscles from the shoulder laced with thin layers of fat.
This combination together with hanging on the bone for a month, gives an exceptional depth of flavour.
Due to the marbled nature of our boneless rib, means it does suit cooking a little longer if you prefer not to eat your beef rare.
