When our Red Rubies are grazing the lush pasture here at the farm, they are very striking. Their wonderful deep red colour matches the patchwork of any fields that are cultivated in the rolling landscape around us.

When they have reached maturity, the broad brisket is clearly visible between their front legs. It is a sign of real "beef to the hocks" in old fashioned, beef breeds.

Taken from the underside of the shoulder, the brisket is a broad piece with a long line of fat, which we immaculately trim and roll into a joint. Fantastic for pot roasting.

With a lovely texture and, after careful trimming, just the right amount of fat, the Brisket is the most mouthwatering of hearty pot roast joints, especially with some swede and potatoes grown in red Devon soil!
