      One of the world’s best-loved small fishes, sardines are something of a superfood -  high in omega-3, rich in vitamin D and calcium and relatively low in mercury. A tin of sardines offers a quick, effortless lunch. Accompanied by a flavour-packed Chimichurri sauce and a slice of your favourite toast, it's bound to become a new favourite. 

      Ingredients

      • For the sauce

      • 1 handful
        Coriander
      • 1 handful
        Parsley
      • 1
        Green chilli
      • 2
        Spring onions
      • 1
        Lime
      • A glug
        Olive oil
      • A glug
        Vinegar
      • 1 teaspoon
        Cumin
      • A good pinch
        Sea salt
      • A good pinch
        Black pepper
      • To serve

      • 1 tin
        Sardines
      • Slices
        Sourdough

      Method

      • To make the Chimichurri sauce, finely chop the coriander, parsley, spring onions, garlic and green chilli. Bind together with the olive oil, cumin, lime juice and a dash of good quality vinegar. 

        Remove the sardines from the tin and place on a baking tray. Grill for 4 - 5 minutes until just crisp. Place on a slice of toasted sourdough with a good few tablespoons of the sauce. 

        Serve immediately.
