  • Our 100% Grass Fed Beef Brisket epitomises all that's good about our slow-grown, Grass Fed beef. 

    Our Flat Beef Brisket is perfect for those who enjoy eating fat. Full of character and with a real old-fashioned depth of beef flavour, our Grass Fed Brisket has a wonderful amount of rich buttery fat, that is ideal for slow cooking or gently smoking, to allow the fat to render. 

    Brisket responds best to long, slow cooking - this allows the open grain of the meat to relax and become perfectly tender. It also allows the seam of fat to melt away, enriching the gravy and complementing the meat.

  • 100% Grass Fed Beef

  • To defrost the Brisket remove from the freezer and leave on your kitchen worktop for one day. Alternatively, place the Brisket in the fridge and allow it to gently thaw for two days.Before cooking, remove the packaging and allow the joint to dry out and reach room temperature. 

    Preheat a fan assisted oven to 140C. 

    Lightly season the brisket joint and place into an ovenproof roasting dish. Add a good glug of wine and a whole pouch of beef stock and cook for a good 4-6 hours, the longer the better. Top up any liquid if needed during this time. 

    Or try smoking; Set the smoker for 115C. Place the brisket into the smoker.

    The brisket should be removed when it reaches 87C, this will take around 8-10 hours.
