Our exquisite hand-dived scallops are carefully wrapped in our native breed streaky bacon, creating such a fabulous combination, fit for the finest festive gathering.
Simply pan fry to crisp the more-ish bacon - its lacing of fat keeps the scallop wonderfully tender while it cooks to perfection.
Our hand dived scallops are simply the best scallops in the land, they have a stunning butteriness and incredible sweet flavour. Partnered with our award winning, traditionally cured streaky bacon, this is simply food from heaven!
Our Scallops in Blankets make a fabulous festive starter or a fine canapé. We recommend you serve them alongside a glass of Swanaford Classic Cuvée for a real Christmas treat.

Ingredients
Scallop (FISH)
Native Breed Pork, Salt, Preservative (E250, E252)*, Demerara Sugar.
*contains a TRACE of nitrates.
Cooking Instructions
Our cooking times are just a guide. Your fish may vary in thickness, it may be warmer or cooler when it hits the pan, your oven or hob may behave differntly to ours. Use our instructions as a guide, but deploy your senses too; look, prod, listen and smell while you cook. After all, cookery should provide us pleasure as well as nourishment.
Pan Fried
To a pan add some olive oil or rapeseed oil and heat.
Cook for 2-3 minutes on each side until the bacon is crisp. Add a knob of butter in for the last 2 minutes of cooking.
How to store
All our seafood is caught at its best and blast frozen immeditely at the quayside.
Once defrosted it will be as fresh as the day it was landed.
Once thawed, store it in the fridge and enjoy it within the next 2-3 days as you would with fresh fish.

We make this recipe so often when we have guests over that need a bit of a treat. It is unbelievably simple to make and always pleases the crowd. You can of course make this feast in your kitchen under the grill, but there's something just a little bit more special about cooking the scallops in the embers of a fire, better yet the glowing embers of a beach campfire.
