Highmoor is a stunning Organic washed-rind cheese made by award winning dairy Nettlebed Creamery.
The plump, squidgy cheese has a wonderfully yielding nature when served at room temperature. It is washed to encourage the ruby-red rind that makes it look so inviting on a cheese board.
Full of savoury, meaty flavours with brothy richness, Highmoor is a real treat. Its supple giving texture provides a luxurious mouth-feel not dissimilar to French classics Livarot and Pont L’Eveque.
When it comes to partnering this special cheese, it really is incredibly versatile, you could pair it with a glass of red or a pale ale to bring out the meaty-savoury flavour, or it also eats harmoniously alongside a dry white to compliment its natural creaminess.
We highly recommend bringing this cheese to room temperature before eating it for the best possible experience.
Each half Highmoor is approximately 150g.
Pasteurised cows milk* (DAIRY) , starter cultures, rennet, salt.

It is necessary to apply a common sense approach to cheese care and respond to the cheese you have in front of you, as opposed to following rigid guidelines.
The best option is to keep the cheese wrapped in its waxed paper within a box in the fridge. The container will help to prevent the cheese from drying out and prevent the cheese from absorbing flavours.
For best flavour, bring to room temperature one hour before serving.
If freezing, freeze on day of delivery. Defrost in the fridge. Once defrosted, keep refrigerated and use within 24hrs.
