Free Range Pork
Take a castiron pan and place on a high heat.
Lightly season the escalope with salt and pepper.
When the pan is smoking hot add the escalope to the pan. Cook for no more than a minute on each side.
Finish by squeezing a little lemon juice over the escalope and serve.
