      • Our Wild Venison Shanks are a brilliant cut for a gorgeous slow cooked feast. With meltingly tender meat that falls from the bone and rich, sumptuous bone marrow that makes an incredible addition to your sauce, this is seriously good food.

        Venison Shanks are leaner than better known lamb shanks. They are rich in Omega 3 and 6, as well as packed full of other vital vitamins and minerals including zinc, selenium and collagen. 

        All our wild venison is hung in the fur for up to 2 weeks and then dry aged for a further 7 days. Our team of Artisan butchers cut the Shank from the hind leg of our properly wild venison, leaving you with a good chunk of delicious meat perfect for your recipe.

        Our wild venison comes from vital conservation management of the South West countryside. All our wild venison is completely free ranging and it is probably one of the most ethical and sustainable choices for your plate. By choosing our wild venison you are directly supporting the careful management of our countryside, improving biodiversity of farmland and woodland habitats and protecting fledgling forests for future generations to enjoy.

        As all our Venison are properly wild, the weight of each shank will vary between 1kg and 1.5kg. 

      • Wild British Venison

      • Our cooking instructions are just a guide. Your cut of meat may vary slightly in shape or thickness, it may be warmer or cooler when it hits the pan or oven and your oven or hob may behave differntly to ours. Use our instructions as a guide, but deploy your senses too; look, prod, listen and smell while you cook. After all, cookery should provide us pleasure as well as nourishment.  

        Preheat your oven to 220C/Gas 7.

        Place the venison shanks in a roasting tray, then rub all over with Organic British rapeseed oil, pure sea salt and freshly ground black pepper. Place the shanks into the oven and roast for 20 minutes.

        As they’re browning, peel and finely chop two onions, peel and finely slice about 5 cloves of garlic.

        Find a casserole pan that will fit the shanks quite snugly and place it over a medium heat. To the pan add a good drizzle of rapeseed oil, or you could use beef dripping. Add in the onions, garlic, a few bay leaves and a few sprigs of rosemary. Leave to sweat for about 10 minutes.

        Remove the shanks from the oven and turn the temperature down to 140°C/275°F/Gas 1.

        Add the shanks to the casserole pan along with a tin of tomatoes and a pouch of pure stock.

        Stir everything together, cover and put in the oven to stew for 3 hours 30 minutes to 4 hours, or until the meat is falling off the bone and the sauce is thick, topping up with water or stock as you go.

      • All of our meat is delivered frozen ready to pop straight into your freezer, once defrosted these can be kept in the fridge for up to 3 days.

      All Pipers Farm meat is blast frozen at the perfect moment, locking in important nutrients and guaranteeing it tastes amazing. We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
