This is a truly sensational cut and a very special winter treat. With a fine-grained texture and rich rounded depth of flavour, a little of our saddle of venison goes a long way. 

Our venison saddle goes wonderfully well with fruity autumnal sauces, like blackberries and sloes or classic Cumberland sauce. After all, what grows together, goes together. 

Winning a coveted Great Taste Gold award, our venison saddle fillet received high acclaim, here's what the judges said:  "As good a piece of Venison as you can get!" 

Each saddle weighs approximately 600g. We recommend 3-4 portions per Saddle.

Your meat will arrive frozen.

When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes until they are fully thawed. Once fully thawed remove the packaging and get cooking.

You can also gently thaw any items by leaving them in the fridge or at room temperature.

Notes from the kitchen

Allow to come to room temperature and then roast at 180C for 35-45 minutes for medium-rare. Rest for at least 15 minutes and serve sliced thinly alongside mushrooms, potatoes and with a dollop of redcurrant sauce.
