This is a truly sensational cut and a very special winter treat. With a fine-grained texture and rich rounded depth of flavour, a little of our saddle of venison goes a long way.
Our venison saddle goes wonderfully well with fruity autumnal sauces, like blackberries and sloes or classic Cumberland sauce. After all, what grows together, goes together.

Each saddle weighs approximately 600g.
Allow to come to room temperature. Generously season with pure sea salt and some cracked black pepper.
Take a cast iron pan and add a little oil. Carefully seer the saddle until golden brown all over, then place in an oven proof dish.
Roast at 180C for 12-15 minutes for medium-rare.
Rest for at least 15 minutes then slice thinly.
