If you're a fan of the finely grained texture and robust flavour of a sirloin steak, you'll love this joint. A beautiful melting layer of fat combines with subtle marbling to produce meat that's flavoursome, juicy and with a real depth of flavour.

When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes until they are fully thawed. Once fully thawed remove the packaging and get cooking.
You can also gently thaw any items by leaving them in the fridge or at room temperature.

Notes from the kitchen
Take a cast iron pan and place over a high heat. Brown off the fat of the sirloin and then place into an oven preheated to 180C.
Roast for 20 minutes per kg.
Leave to rest for 20 minutes.
