      Christmas isn't Christmas without lashings of Brandy Butter to enjoy. 

      Perfectly suited to pair with Christmas pudding, Mince Pies, Stollen bites, or in fact any pudding that you find yourself tucking into over the festive season. This version, by our talented friend Cherie Denham, is simple to make and incredibly moreish to eat. We guarantee you'll be wanting to eat it off the spoon. 

      Ingredients

      • 140g
        Butter
      • 55g
        Golden caster sugar
      • 45g
        Light muscovado sugar
      • 1
        Clementine, zested
      • 1 teaspoon
        Vanilla paste
      • 2-4 tablespoons
        Brandy

      Method

      • Allow the butter to come up to room temperature. 

        Blend the butter and both sugars together with a handheld mixer until soft and creamy. 

        Add the clementine zest, vanilla and brandy and mix again. 

        Taste and add a touch more brandy if you like, then cover and place in the fridge until you're ready to use.
