1/2Bulb of fennel, grated
Preheat oven to 250C.
Break the sausage meat into a small pieces and spread over a small baking dish. Roast in the oven for 15 minutes until cooked though.
Place 2 large baking sheets in the oven to preheat.
Roll out the pizza dough to just under the size of your baking sheet.
Making two pizzas at a time, place the rolled dough onto the hot baking sheet. Quickly top with a smear of the Isle of Wight pizza sauce, a good sprinkling of Quickes Cheddar, some dots of sausage meat, fennel, oregano leaves and breadcrumbs.
Bake for 10 minutes.
Repeat with the remaining 2 dough balls.
Enjoy with a crisp green salad.
