Put down the takeaway menu and instead make your own Red Curry at home. This classic dish takes just a few minutes to prepare and it's bursting with flavour.

In a castiron, lidded pan, heat the ghee until it just starts to smoke. Add the chicken into the pan and carefully to brown.
Turn down the heat and add the red curry paste to the pan allowing it to coat the chicken, warm up and release the aromatic flavours.
Pour in the coconut milk and thoroughly mix the ingredients all together.
Cook on the hob for around 1 hour, until the chicken is tender.
Season to taste and squeeze a little lime over the top. Serve with rice, flatbreads and steamed greens.
