This is a really simple and delicious one dish meal - a wonderfully tasty and rustic feast. When fish is this good, it rarely needs much encouragement to be great.



  • Preheat the oven to 200C. 

    In a roasting tin place the potatoes and garlic. Season well and drizzle with oil. Roast in the oven for 15-20 minutes, or until the potatoes are beautifully golden and tender. 

    Remove the potatoes from the oven and scatter the onions through the potatoes. 

    Season the sea bass with salt and pepper and lay the fish over the top of the potatoes. Sprinkle the zest and juice of one lemon over the fish and potoes. Drizzle the whole dish, especially the fish, with some more oil and place back into the oven, then cook for a further 15 minutes. 

    Remove from the oven, squeeze out the delicous roasted garlic, scatter with a little dill and serve with a big dollop of garlic aioli.
