Boxty is a traditional Irish recipe made using finely grated raw potato, flour and salt. Similar to a potato cake, this particular recipe is something of a family heirloom for our friend Cherie Denham. Luckily for us, she's shared her secrets, and topped the delicious boxty with rashers of our tasty smoked bacon and a poached egg. 

It's the perfect dish to serve as breakfast or brunch any time of year, but in Cherie's household it's always enjoyed on Christmas morning - fuelling everyone to last until the splendid roast turkey dinner later in the day. 

Ingredients

  • For the Boxty

  • 140g
    Mashed potato, cold
  • 140g
    Raw potato, grated
  • 85g
    Plain flour
  • 1/2 teaspoon
    Bicarbonate of Soda
  • 1/2 teaspoon
    Sea salt
  • A pinch
    Freshly ground black pepper
  • 140ml
    Milk
  • 15g
    Butter
  • 2 tablespoons
    Oil, for frying
  • To serve

  • 6 rashers
    Smoked streaky bacon
  • 3
    Eggs

Method

  • Grate the raw potato into a bowl and turn out into a clean cloth. Wring until all of the starchy liquid comes out.

    Place the mashed potato into a bowl and add the grated potato.  

    Sift the flour, bicarbonate of soda and salt and add to the potato along with the black pepper. Mix well and gradually add the milk and egg. The mixture will look like a thick potato batter.

    Heat the butter and oil in a frying pan over a medium heat, add spoonfuls of the batter to the pan, press down gently and cook each side for 3 minutes or until a lovely, golden brown crust forms.

    Keep the boxty warm whilst you fry your bacon and cook your poached egg, then serve everything piled up on a plate together. Tuck in!
