This recipe is such a great option when you have a gang coming over for a BBQ. With a little bit of prep ahead your guests can enjoy wonderful flavours of our grass fed lamb, paired in classic style with fresh garden mint.



  • Soak the skewers in water (this stops them from setting on fire on the BBQ).

  • To a bowl add the lamb mince, minty rub, sea salt, cumin, coriander seeds, garlic and mint. Get your hands into the bowl and thoroughly mix together all of the ingredients. Shape the mixture into fat sausages, making sure they are fairly compact. 

  • Take the skewers from the water and insert them into each kofta. Place the skewers in the fridge to allow them to set up (half an hour is fine, but longer is better). 

  • Light the BBQ using natural firelighters and sustainable charcoal.

  • Remove the koftas from the fridge, brush each one with good quality olive oil and place on the grill of your BBQ. Cook for 4 minutes on each side, being careful not to move them too much. 

    Serve with tahini yoghurt and homemade flatbreads.
