Prior to cooking, set the chicken legs out on a chopping board and let the meat come to room temperature. Using a sheet of kitchen towel, thoroughly dry the chicken legs. This creates a really lovely, crispy skin.
Preheat your oven to 180C.
Place the chicken legs on a roasting sheet, rub with a little oil or butter, salt and pepper, both inside and out, and add any flavourings you're using.
Roast in the preheated oven for 40-45 minutes, until the internal temperature reaches 75C and the skin is a deep golden brown and sounds hard to the touch.
Let the chicken rest for 8-10 minutes before serving.
