Defrost the steaks by placing them into a bowl of cool water (still in their packaging). They should thaw in less than 10 minutes.
Once thawed, remove the steaks from their packaging and dry them all over using a kitchen towel.
Season well with good quality pure sea salt.
Take a hot castiron pan, without adding any oil, place the steak in the centre of the pan and cook for two minutes on one side.
Turn the steak over and cook for two on the other side.
Turn over again and cook for a further two and a half minutes, flipping over onto each side to get a good amount of caramelisation onto the steak. You could also baste the steak at this point.
Rest the steak uncovered for 10 minutes before serving.
