We grow our 100% grass-fed lamb slowly, they take a little longer to finish and so, are classed as Hogget. The maturity of our Hogget creates a richer depth of flavour and marbling than you find in younger lamb.

Slow cook our lamb shanks to release an amazingly gelatinous, rich flavour.
Best slow cooked for at least 2 hours on a low heat until the meat falls away from the bone.
