Squid really is one of the most versatile and delicious of all seafoods, with a sweet taste and tender texture. This is a simple, quick but flavourful recipe to make at home; it is perfect to enjoy as a sharing starter.

Heat the oil in a deep pan to approx. 170°C. Test the temperature before frying by adding a small piece of bread to the oil; if it quickly fizzles and crisps then the oil is hot enough.
Meanwhile, prepare your Squid. Cut the tentacles in half then slice the squid into thin rings around 1cm in thickness. Place to one side in a bowl of cold water.
Add the salt, pepper and chilli flakes into your flour and mix thoroughly.
In small batches take the squid from the water and dip into the flour, giving it a good massage to get a sticky but light coating. Then place carefully into the pan of hot oil. Fry for about 2 minutes or until firm, pale and crisp.
Drain on kitchen paper.
Once all the squid pieces have been fried, place into a bowl and finish with a generous squeeze of lemon.
