Properly Free Range Spatchcock Chicken is an absolute winner on any BBQ. Wonderfully tender meat sits underneath gorgeously crispy skin, for a feast that is unlike any other.
To spatchcock a chicken, the backbone needs to be opened up, thus allowing it to be completely opened out and flattened. Doing this reduces the cooking time significantly and allows the whole bird to be cooked in different, speedier ways, like barbecuing.
Our delicious Properly Free Range Spatchcock Chicken can also be roasted in the oven and works exceptionally well with various marinades.

Cooking Instructions
To cook in the oven
Preheat the oven to 180C.
Generoulsy season the spatchcock chicken and place into a roasting dish.
Pop the dish into the oven and roast for 40 minutes.
Remove from the oven and leave to rest for 15 minutes before carving.
To cook on the BBQ
Light your BBQ and bring the coals to a medium heat.
Place the chicken skin-side down over the hot part of the barbecue, away from any direct flames, and cook for 4-5 minutes until well browned.
Flip over and cook for a further 4-5 minutes.
Transfer to a cooler part of the BBQ and cook for around 30 minutes.
