Take a castiron pan and place over a medium heat.
Add a little ghee to the pan and allow it to sizzle. Lightly season the chicken breast and place in the pan.
Cook for 2 minutes then flip over and cook on the other side for 2 minutes.
Flip back over and cook for a further 2 minutes on each side.
You could add a little butter and herbs at this point and baste the chicken for a further minute.
Leave to rest for 5 - 10 minutes before serving.
