We cut our Diced Grass Fed Mutton from the shoulder, which means you get all the wonderful collagen-rich sinew and a little fat, that once cooked down will add a pleasant unctuous mouthfeel and so much flavour to your dish.
Diced mutton requires a slightly longer, slower cook, with plenty of liquid. The meat will become so meltingly delicious it will fall apart and can be eaten with a spoon - a method known as a la cuiller.
Cull Yaw is a term commonly used in Cornwall to refer to a cull ewe, which is a sheep that is no longer suitable for breeding.
Our mutton sheep are reared for at least 7 years, resulting in a rich and deep flavour. After their breeding cycle, they forage in ancient woodlands and rich herbal leys to add a wonderful layer of fat that enhances the taste further.

Take a cast iron casserole pan and fry the diced mutton with a little oil until lightly browned.
Add your chosen ingredients and plenty of liquid then cook for at least one hour for beautifully tender meat.
All of our meat is delivered frozen ready to pop straight into your freezer, once defrosted these can be kept in the fridge for up to 3 days.

I ordered both the fresh well diced grass feed mutton and mutton on the bone was and both very tasty. It cooked well and everybody in my family enjoyed the tender pieces of mutton with the mutton bone pieces too, because when I cook the mutton with the bone, the marrow and other substances from the bones flavour the meat, adding a depth of tasty flavour that does not exist with just the boneless cut.
I would have given 5 stars if the diced pieces were bigger.
It didn't taste strongly of mutton as I thought it might. In an effort to reduce our carbon footprint I have bought goat which can taste a bit 'goaty', this tasted more like lamb. A couple of hours in the slow cooker left it deliciously tender, cooked in a red wine sauce - recipe found on Great British Chefs. The veg were al dente - put in an hour later.
Never had mutton before so thought we would give it a try. Just as tasty and tender as lamb .... plus the sheep gets to live longer and cheaper to buy. Would wholeheartedly recommend.
